You know what’s a bad idea?  Looking at Pinterest when you are hungry.

Oh!  Have I mentioned Pinterest before?  It is only the most amazing site ever.  All the haters and naysayers need to chill.  If you think you don’t have time for Pinterest, you should stop reading my blog and devote that allotted time to pinning fantastic things.  Pinterest is way more informative.  FYI.

But since I am nice and all, I shall share with you a few delights I have discovered over The Pinterest.

So.  Sometimes I hate cooking dinner.  It’s true.  What with all the complaining, whining, and 4 year old boys saying my food is “too sausage” and all.

Dinner.  Such a devastating ordeal all around.

Well, since I am a bit busy and all and have many mouths to feed, I thought I might share these easy recipes with you.  Because I am nice like that.

Easy Recipe #1

Alert:  This recipe is mostly easy if you have cooked chicken on hand.  I like to cook up a bunch of chicken in the crockpot, shred it, and freeze it in 2 cup portions.  Because I am on the ball.

Second Alert:  If you put cooked chicken in your kitchen aid and turn it on for just a moment, you will have shredded chicken.  This is much faster than the two fork method.  That helpful hint brought to you BY PINTEREST.  Seriously.  Pinterest.  Check it out.

Chicken and Wild Rice Casserole

Prepare two boxes of Uncle Ben’s Wild Rice casserole.  Normally I frown upon conveniently prepared foods.  Not because I am healthy.  Mostly because I am poor and it is cheaper to cook from scratch.  But this rice is awesome and I totally dig it.  I get all handsome on this rice.  It is yummy.

I wonder why my pants feel tight?

Spread the rice in a 13×9 pan.  Top with the cooked chicken.  Now prepare a white sauce.  I am seriously the coolest person in the world because I know how to make white sauce. Envy me.

White Sauce . . .plus cheese.  So it might be cheese sauce.  But whatev:

2 tbs butter
1 tbs flour
1 cup milk
1/2 cup grated cheddar cheese
2 tsp lemon juice (optional)

Blend melted butter and flour in a sauce pan over medium heat with whisk.  Gradually
add milk and thicken.  Add cheese and stir until melted.

Pour sauce over the chicken.  Bake at 350 for 20 minutes.

Your children will rise and call you blessed.  Except for Handsome Dude.  He finds it a bit sausage, you know?  But Handsome Dude does like these bread sticks.  And lucky you!  I’ll share the recipe!

Those bread sticks are truly a delight.  They are copycat Olive Garden.  I lightened them up a bit by making smaller bread sticks (I think I made 18 or 20) and using about 1/4 of the amount of butter.

A stomach bug has entered our home.  The good news is I do not have to cook dinner.  The bad news is I have to clean up vomit.  Which is always fun.

If it’s any consolation, Erin, I did read that comment to my husband and we both shared a chuckle over it.

And my husband NEVER chuckles.  Be honored.

    Why do I feel as though portions of this post are directed ever so slightly at me? 😉 FYI- I went to Pinterest the other day to look for ideas for a baby shower. Suddenly I realized that my eyes were glazed over and an entire hour had passed. And THAT, my friend, is why I avoid Pinterest. Besides, your blog is so much more fun.

    Did you mean to write “rice and call you blessed”? Because either way, it’s pretty awesome. I would never choose Pinterest over your blog. I’m not hating on the other site, but…OVERWHELMING! CAN’T THINK STRAIGHT! I might have to take an adderall before I checked it out for any amount of time.

    And I really need my day made lately. I’m swirling in a toilet of despair because march refuses to get here and I am sad and lonely.

    So I can either seek psychotropic medication or you can keep giving me the COW. No pressure 😉

  5. I feel strongly that you must hold tightly to your beloved elk meat and applesauce and just pay me in bread sticks instead. But please make them full-size and containing all of the recommended butter.

  6. Let me share a recipe with you, to go with your cooked chicken. I dont care for prepackaged stuff much, mostly because of spices they put in that upsets my tummy lol. But Knorr makes mexican rice that is the bom diggity. I add a drained and rinsed can of black beans, oh and leave out the oil, cant see that it needs it. I add cut up chicken, so good. Oh and if you want it kicked up a notch, add some pepper jack cheese, oh yum!

    Guess what? As I was getting our cat doctored, and paying for vaccines for the puppy, and scheduling a spaying for two OTHER cats plus the puppy, I was bemoaning the expense of pets…That seem to be so cheap on the surface.

    I heart Pinterest! In fact, I made the Hawaiian Crockpot chicken last night. It is delish. And super-duper easy! 5-6 frozen chicken breasts, 1 jar of Hawaiian BBQ sauce, and 1 can of crushed pineapple in a crockpot for 6 hours. Tah-dah! I made rice to go with it… and it was awesome!

    Congratulations on two calm labs. We have a 4-yr. old chocolate lab and he still thinks he’s a puppy most of the time with lots of energy!

    I’ve been gone 2 weeks and I have no idea (absolutely NO idea) what is going on with your dogs.
    Okay, so maybe it’s been longer than 2 weeks, but not by choice.
    Okay, so maybe it is by choice since it was either never go to bed or read your blog.
